There really isn't a definite reason why Minecraft has yet to reach any Nintendo consoles, especially the Wii U. It is more powerful than the XBox 360/PS3 that can run Minecraft just fine, the gamepad would be perfect for inventory management, and it fits Nintendo's model of making clean games that any age can enjoy.
Rumors point to the talks between Mojang and Nintendo not accomplishing anything, but it looks like a Minecraft game is coming to the Wii U after all. That is, Minecraft: Story Mode.

In an interview with The Verge, Telltale Studios revealed that the Minecraft story-based spin-off they are developing will be coming to the Wii U (presumably on release). The first episode (the game will be composed of multiple 'episodes', continuing the storyline) of Minecraft: Story Mode is expected to be released by the end of 2015 on PC, Mac, PS4, PS3, Xbox One, Xbox 360, Wii U, iOS, and Android.
